The event formed part of the Festival des Étoilés Monte-Carlo and reunited two chefs with a long history together. Ruggieri worked alongside Alléno for almost eight years and was part of the team behind the opening and development of Alléno’s Pavillon Ledoyen in Paris, which went on to achieve three Michelin stars.
For their Monaco reunion, Ruggieri brought his Mediterranean and Italian influences to the Japanese-inspired cuisine of L’Abysse. The collaborative menu combined the restaurant’s signature approach with Ruggieri’s own culinary perspective, accompanied by sushi, appetisers and desserts created by Alléno and his team.
Ruggieri described the evening as an opportunity not only to work alongside his former mentor again after several years apart, but also for members of his own brigade to experience working with Alléno.
The Festival des Étoilés continues on September 23 with another collaboration, before the gastronomic programme culminates with its grand closing gala on November 14.
