Christian Garcia, head chef at the Prince’s Palace, will retire on August 31 after almost 40 years serving Monaco’s Princely Family…

Garcia began his career in Monaco’s hotel industry, working at establishments including the Hôtel Hermitage and Hôtel de Paris before arriving at the Palace in 1987 for what was originally intended to be a seven-month assignment. It became the defining chapter of his career, during which he cooked for Prince Rainier III, Prince Albert II and generations of the Princely Family.

His cooking has remained firmly rooted in the Mediterranean, drawing on fresh fish and produce from the Palace’s Roc Agel estate. Garcia described Prince Albert as an enthusiastic gourmet who enjoys discovering new flavours, adding that cooking daily for the same family required constant variety and creativity.

Among his most treasured memories was meeting Nelson Mandela after Prince Albert invited him to greet the South African statesman following a meal. Garcia has also cooked for numerous international leaders and dignitaries during his years at the Palace.

His successor arrives from the Élysée Palace in Paris, where he spent 25 years, including as sous-chef. Garcia, meanwhile, will not disappear entirely from gastronomy, continuing to represent the Palace at selected international and charitable events.
