One of Monaco’s best-known restaurants is enjoying a remarkable return. Stars of Monaco, formerly Stars and Bars, reopened in June after the address had successively housed Conscientiae and Marius, and its familiar atmosphere has quickly drawn back generations of customers…
The response has exceeded expectations. In just two months, the restaurant has grown from around 40 covers to 400, with a strong local following and families spanning two or even three generations returning to a place closely associated with their lives in Monaco.
For Didier Rubiolo, the aim is not to reinvent Stars but to revive the institution whilst bringing fresh energy to it. Familiar dishes have returned alongside updated recipes, with two former favourites set to reappear each week from September according to customer requests.
Many of the original rituals remain, too. Long-standing staff are once again welcoming guests, whilst customers who celebrated birthdays, family occasions and countless evenings there are rediscovering familiar faces at neighbouring tables.
After three years away, Stars has returned with something difficult to manufacture: memories, familiarity and a genuine sense of Monaco community.
