This summer, Hôtel Métropole Monte-Carlo is ushering in a new chapter of luxury, refinement, and indulgence, as it unveils a trio of major innovations set to elevate its standing among the Principality’s most iconic addresses. Beginning in July 2025, the hotel will debut The Spa Métropole by Guerlain, a tranquil sanctuary created through an exclusive partnership with the prestigious French beauty house. The spa marks a pivotal milestone in the hotel’s ongoing renovation and will offer an immersive retreat where elegance meets advanced skincare rituals.

Designed by Samy Itani of the Itani & Courtois agency, the space is bathed in natural light, with clean lines and a calming mineral palette featuring stone, raw wood, and textured finishes. Ten treatment rooms will host Guerlain’s renowned rituals, including the coveted Ultimate Black Orchid treatment, while three signature treatments—Monaco Glow, Puissance du Rocher, and Golden Sand—have been specially crafted to reflect the spirit of the Riviera. From tailored treatments for men and couples to Guerlain makeup services and world-class pedicures by Bastien Gonzalez, the spa is a holistic oasis complete with sauna, hammam and a cutting-edge fitness studio.

In parallel with this wellness renaissance, Hôtel Métropole’s culinary flair is making waves with the highly anticipated return of ZIA at Odyssey, the poolside restaurant dreamt up by Karl Lagerfeld. From May 2nd 2025 until October 1st 2025, ZIA reclaims its place as the beating heart of Mediterranean indulgence. Backed by Executive Chef Christophe Cussac, the dynamic duo Manon Santini and Rocco Seminara are once again leading the charge. New this season, ZIA now serves breakfast and lunch to hotel guests and the public alike. From May 3rd 2025, mornings begin with Colazione da ZIA, a gourmet Italian breakfast in the sunshine, offering almond croissants, cornetti, ricotta pancakes and signature Pandoro French toast. Lunch service from May 2nd 2025 tempts diners with a menu steeped in Italian authenticity, from Sicilian branzino to Modena-style tigelle, alongside artful cocktails and mocktails.

The festivities continue from May 28th 2025 with ZIA Aperitivo Lounge, where guests sip Frozen Negronis around the pool to the rhythm of sun-drenched beats, before settling into ZIA Cena as night falls. Dinner is an event in itself, starring dishes like truffle caviar pizzas and the sweet pizzetta creations of dessert champion Manon Santini, all served in an intimate and festive setting that captures the essence of la dolce vita.

Meanwhile, the Hôtel Métropole’s transformation continues inside with the unveiling of 45 newly renovated rooms, set to welcome guests from August 2025. Designed by celebrated French interior architect Jacques Garcia, the new rooms blend natural light, flowing lines and luxurious materials in a contemporary interpretation of Mediterranean glamour. Located on the second and third floors, these rooms mark the hotel’s first major update since 2004—excluding the 2019 redesign of the Carré d’Or Suite—and embody Garcia’s timeless aesthetic, tailored for ultimate comfort.

At the heart of the hotel’s culinary excellence remains Les Ambassadeurs by Christophe Cussac. Since its opening in 2024, the restaurant has quickly established itself as a gastronomic landmark, earning two Michelin stars in its first year—an honour reaffirmed in March 2025. Chef Cussac, alongside the talented Sonny Dufour, crafts a luminous Mediterranean cuisine, with service orchestrated by Marco Tognon and a cellar curated by sommelier Frédéric Woelfflé, boasting over 15,000 bottles. The experience is punctuated by spectacular trolleys, from fresh bread baked daily by six in-house bakers to exquisite desserts by pastry chef Patrick Mesiano.
