A new restaurant concept inspired by the traditions of the French brasserie has officially arrived in Monaco with the opening of Le Fernet Monte-Carlo, a venue aiming to combine refined dining with a relaxed and convivial atmosphere in the heart of the Principality.
Positioned as both a restaurant and social meeting place, Le Fernet draws heavily on the spirit of classic Parisian brasseries while adapting the concept to Monaco’s more polished Mediterranean setting. The project was developed around the idea of comfort, hospitality and shared dining experiences, with the team describing the venue as a place designed as much for conversation and atmosphere as for gastronomy itself.
The restaurant’s interior has been created by Paris-based designer Rodolphe Parente, known for blending contemporary aesthetics with vintage influences and traditional craftsmanship. The design incorporates warm wood finishes, brass detailing, mirrors and soft lighting, creating a setting that moves between lively dining areas and more intimate lounge-style spaces.

The culinary direction is led by chef Mathieu Dorlac, whose menu focuses on elevated brasserie cuisine using seasonal ingredients and classic French culinary techniques. The offering includes seafood, shellfish, foie gras, premium meats and traditional desserts inspired by French pâtisserie, all presented with a more modern and refined approach.
The restaurant also places particular emphasis on its wine programme, curated by head sommelier Florine Huby. The cellar has been designed to highlight a broad selection of French wine regions, from Jura to Corsica, with each terroir presented alongside specially commissioned illustrations intended to reflect the character of the wines themselves.
Live music performances are also planned on selected evenings, reinforcing the venue’s ambition to establish itself as a long-term social and gastronomic destination within Monaco’s increasingly competitive dining scene.
With Monaco continuing to attract new hospitality concepts blending luxury with more relaxed experiences, Le Fernet enters the market aiming to offer a contemporary interpretation of the traditional French brasserie without losing the sense of warmth and familiarity that defines the genre.
