Monte-Carlo Société des Bains de Mer (SBM) reaffirmed its status as a global gastronomic powerhouse at the 2025 Michelin Guide France ceremony, held in Metz on Monday, March 31. The highlight of the evening was L’Abysse Monte-Carlo, which earned an impressive two Michelin stars just eight months after opening, solidifying its place as Monaco’s premier sushi destination. Meanwhile, Elsa, the Riviera-inspired gem at Monte-Carlo Beach, was awarded one Michelin star, while the Blue Bay Marcel Ravin received the coveted Passion Dessert title, recognising its excellence in pastry.
Since its debut in July 2024 at Hôtel Hermitage Monte-Carlo, L’Abysse Monte-Carlo has been an ode to the artistry of sushi. Under the guidance of Chef Yannick Alléno and Master Sushi Chef Yasunari Okazaki, the restaurant blends traditional craftsmanship with sustainability, using responsibly sourced fish caught in harmony with nature’s cycles. Every dish reflects the seasons, and the meticulous preparation process—rooted in techniques such as ikejime, which preserves the fish’s texture and flavour—exemplifies the pursuit of perfection. “This is a tremendous honour,” said Chef Okazaki, expressing gratitude for the warm reception L’Abysse has received in Monaco. Chef Alléno echoed his sentiments, calling the accolade “a recognition of the team’s dedication to excellence.” L’Abysse Monte-Carlo is now the only Japanese restaurant in Monaco and the French Riviera to hold two Michelin stars.
Tucked within Monte-Carlo Beach, Elsa embodies Mediterranean elegance with a contemporary twist. The restaurant, led by Chef Marcel Ravin and Chef Domenico D’Antonio, draws inspiration from both the Riviera and Ravin’s Caribbean roots, creating a “marine garden” concept that seamlessly blends land and sea. Dishes such as Piémontese squab with morels and squid ink sauce and rockfish cooked on stone with roasted head consommé celebrate Monaco’s maritime heritage through bold, refined flavours. Receiving a Michelin star just one year after Chef Ravin took the helm marks a significant milestone. “Elsa has always inspired me, and I’m honoured to bring my vision to life here,” he said. The restaurant’s seaside setting, with uninterrupted views of the Mediterranean, adds to the immersive culinary experience.
At Monte-Carlo Bay Hotel & Resort, the Blue Bay Marcel Ravin was awarded the prestigious Passion Dessert title. Since 2019, Michelin has used this distinction to highlight pastry chefs who redefine the art of dessert. Floriane Grand, the restaurant’s pastry chef, has worked alongside Chef Ravin for six years, developing creations that balance indulgence with innovation. Inspired by herbs, botanicals, and the Caribbean, her desserts focus on purity of flavour, offering guests a lighter, less sugary yet deeply satisfying experience.
With these latest honours, Monte-Carlo Société des Bains de Mer now boasts an incredible 10 Michelin stars, further cementing its reputation as one of the most distinguished fine-dining destinations in Europe. The group’s decorated establishments include Le Louis XV – Alain Ducasse at Hôtel de Paris Monte-Carlo (3 stars), Blue Bay Marcel Ravin (2 stars), L’Abysse Monte-Carlo (2 stars), Pavyllon Monte-Carlo by Yannick Alléno (1 star), Le Grill (1 star), and Elsa (1 star). Reflecting on the resort’s growing culinary legacy, Stéphane Valeri, President of SBM, described the new Michelin stars as “a dream turned reality,” while Albert Manzone, CEO of SBM, praised the chefs and staff for their commitment to excellence. With gastronomy at the heart of its identity, Monte-Carlo Société des Bains de Mer continues to set the standard for luxury dining, offering visitors a world-class culinary experience unlike any other.
