Grolet is pening his first boutique in the Principality at the iconic Hôtel de Paris Monte-Carlo. Officially opening on Wednesday, July 30, Grolet’s new venue blends the elegant architecture of Monaco’s most famous hotel with his own signature approach to refined, fruit-forward pâtisserie.
The opening marks a major new chapter in Grolet’s career and builds on long-standing collaborations with chef Alain Ducasse. Having already opened boutiques in Paris, London and Singapore, Grolet says Monaco was a natural next step.
The new boutique will offer Grolet’s signature trompe-l’œil creations, pastries shaped to resemble fresh fruits, alongside reimagined classics. He has tailored several recipes to reflect the Riviera’s character, including a Menton lemon dessert filled with citrus caviar, as well as almond and strawberry creations inspired by Prince Albert II’s fondness for marzipan.
Grolet emphasised his commitment to seasonality, elegance, and authenticity, working with local markets and ingredients while staying true to his artistic roots. “We want pastries that make you want to move, to come and discover them, and come back again,” he said.
On social media, Grolet plans to present Monaco through a more elevated lens, pairing pastry artistry with the grandeur of the Hôtel de Paris. “We’re combining creativity with architecture,” he told Monaco Info, referencing his new marketing approach that includes cinematic drone footage and a heightened visual identity.
