The gilded corridors of the Hôtel de Paris Monte-Carlo are about to smell even sweeter. Celebrated French pastry prodigy Cedric Grolet is officially taking up the post of Executive Pastry Chef at the legendary palace hotel, with a brand-new tea room and boutique—Cedric Grolet Monte-Carlo—set to open this summer in the heart of Monaco.
This marks Grolet’s first venture into the Principality, adding Monaco to an already star-studded list of locations including Paris, London, Saint-Tropez, Val d’Isère and Singapore. His arrival cements a new partnership with the Monte-Carlo Société des Bains de Mer (SBM) and solidifies the hotel’s reputation as a global culinary hotspot.
The pastry phenom, who was named “World’s Best Pastry Chef” by The World’s 50 Best in 2018, will oversee all things sweet across Hôtel de Paris Monte-Carlo’s dining establishments—excluding Le Louis XV – Alain Ducasse, naturally.
“Cedric Grolet is one of the world’s greatest names in pastry today,” said Albert Manzone, SBM’s Deputy CEO. “His arrival enhances our status as a leading destination for the Art de Vivre and gastronomy.”
Set on the elegant patio of the Hôtel de Paris, the new tea room promises an all-day culinary love letter to Grolet’s signature creations. From açaí bowls and salmon Benedict croissants at breakfast, to decadent crêpes and pastries in the afternoon, guests will be spoiled for choice. Expect edible masterpieces like the iconic Mango Flower, Raspberry Diamond, and the kind of “trompe-l’oeil” desserts that look like fruit but taste like heaven.
For those who can’t bear to part with Grolet’s creations, the boutique offers takeaway temptations in the form of signature cakes, cookies, seasonal specials, and his much-imitated, never-duplicated sculptural desserts.
Olivier Thomas, Managing Director of the Hôtel de Paris, said the collaboration is all part of keeping the hotel at the cutting edge of haute cuisine: “Grolet’s refined, creative artistry is perfectly aligned with our ambition to offer guests an exceptional gastronomic experience.”
And there’s more. In honour of His Serene Highness Prince Albert II, Grolet is crafting an exclusive, never-before-seen pastry—set to be unveiled at the grand opening this summer.

The move also has the blessing of Alain Ducasse, no less, who commented: “Cedric knows how to play with the codes of pastry. His contemporary style is always surprising—and always spot-on.”
With Grolet joining a roster that includes Ducasse’s three-Michelin-starred Le Louis XV, Le Grill, and Em Sherif, the Hôtel de Paris Monte-Carlo is now quite possibly the most delicious address on the Riviera.
