Since 2010, the programme has been raising awareness in Monaco around the importance of choosing fish and shellfish from sustainable sources, and this latest move further embeds those values into the Principality’s dining scene.
The American Bar, L’Orange Verte, L’Hirondelle, Le Limùn, and the newly opened Marlow have all pledged to follow Mister Goodfish guidelines. These include selecting seafood based on seasonal availability, sustainable stock levels in the relevant fishing zones, and ensuring that fish are only served once they have reached sexual maturity—thus supporting the reproduction cycle of marine species.
Each season, restaurants receive a “green list” of recommended species that meet these three essential criteria. This encourages chefs to explore new flavours while contributing to marine biodiversity. Far from seeing the guidelines as restrictive, SBM’s culinary teams embrace them as a creative opportunity. At Marlow, for instance—located in the eco-friendly Mareterra district—the popular British-style fish and chips is now prepared with responsibly sourced fish, aligned with the programme’s spring recommendations.
“Everything is done through the right channels, with the right suppliers, and at the right time of year,” said a representative from Marlow. “It makes even more sense in a district built on sustainability.”
With ten SBM restaurants now participating in Mister Goodfish, the company demonstrates that gastronomic excellence can go hand in hand with environmental responsibility. As the spring menu updates roll out, diners in Monaco can look forward to meals that are both delicious and respectful of the oceans they come from.
